Can I set up a Google News search to include multiple sites?

You can limit your search to one domain or none. If you don’t add a site to the search, Feedly will return results from across all of the news sites aggregated by Google News.

A better solution to this would be to follow those domains you'd like to search within and use Feedly AI Feeds instead on top of these domains.
